Patriotic Platters for 4th of July Picnics and Parties!

Robin Boland and her daughterMany of us will either be attending or hosting a backyard BBQ or cookout to celebrate America's birthday! So, we've come up with some easy, cheesy ideas to bring some red, white and blue to your plates and picnic tables.

Flag Fruit Salad
Mix up a cheesy fruit salad with strawberries, blueberries, and roughly chopped rounds of Mini Babybel® Sharp Original.

American Nachos
Layer blue corn chips with The Laughing Cow® Light Creamy Swiss, shredded Mini Babybel® White Cheddar, and salsa.

Red, White and Blue Burgers
Wrap ground hamburger around a wedge of The Laughing Cow® Light Blue Cheese to form a patty and toss it on the grill. The wedge gives you the white in color and the blue in flavor. Top with a bright red tomato and you're all set!

Capital Caprese
Layer Mini Babybel ® Light or The Laughing Cow® Light Mozzarella Sundried Tomato & Basil with fresh tomato slices and purple basil leaves. Drizzle with olive oil and a touch of balsamic vinegar.

Patriotic Pie Squares
Spread The Laughing Cow® Light Creamy Swiss onto graham cracker squares and top with raspberries and blueberries. You could even make stripes with the berries!

Cheesing Up the Ultimate BBQ Must-Have

Summer is filled with meals made on the grill. Whether making dinner for the family or serving to a crowd, one of the ultimate must-haves is corn-on-the-cob. Try this fun recipe to spice it up this summer!

Slim Queso Corncobs
Slim Queso Corncobs

Ingredients (makes three servings):
1 wedge of The Laughing Cow® Light Creamy Swiss cheese
1 teaspoon light mayonnaise
1/4 teaspoon cayenne pepper
1/2 lime, juiced and zested
1 tablespoon chopped cilantro
1/4 teaspoon Kosher salt
3 whole ears cooked corn cobs, halved and kept warm
2 tablespoons grated parmesan cheese
lime wedges
additional cilantro (for garnish)

Directions:
Combine The Laughing Cow® Light Creamy Swiss cheese, mayonnaise, cayenne pepper, lime juice, zest, cilantro and salt in a small mixing bowl. Adjust seasonings as needed.

Using a rubber spatula, transfer cheese mixture to the center of a small plate.

While corn is still hot, (using tongs, corn picks or your fingers to hold) roll corn piece in the cheese mixture to generously coat and transfer to a serving platter. Repeat with remaining pieces.

Top with grated Parmesan and garnish with lime wedges and additional cilantro. Serve immediately.
